She would cut the potatoes up into fries and soak them in the water with a little salt for about a half hour and then she would put either a ton of Crisco or canola oil into a deep pot and get it super super hot so that when you toss drops of water in it sizzled and popped. Then she would put the fries in maybe a dozen at a time till they were nice and brown then scoop them up with tongs onto a plate with a paper towels on it to absorb extra oil, salt them and put another towel over the top then put another handful of fries into the oil, and so on until they were all done. The secret was to not crowd the pot too much and not let them soak in the grease and to serve them right away. Often she would be in doing fries and bringing them out to the table as everybody was eating.
